INGREDIENTS
Dry Ingredients

all-purpose flour
plain flour or maida

cup
sugar

unsweetened cocoa powder

baking soda
Wet Ingredients

VIMTO
½
teaspoon
white vinegar

oil
any neutral cooking oil

water
For the frosting

tablespoons
butter
melted

tablespoons
unsweetened cocoa powder

icing sugar

INSTRUCTIONS
Cake
Preheat the oven to 180C.
Grease lightly and line a 6-inch round cake pan with baking paper. You may skip the paper and do a thorough grease and flour method.
Combine the dry ingredients – flour, sugar, cocoa powder, salt and baking soda in a large mixing bowl.
In another smaller bowl, combine VIMTO, vinegar, oil and water.
Add the wet ingredients to dry ingredients and fold until combined with no lumps.
Pour the batter into the greased pan and tap it once on the counter to settle any bubbles.
Bake in the middle rack of the preheated oven for 20 to 25 minutes or until a toothpick inserted in the centre comes out clean.
Remove from the oven and immediately spoon over a few teaspoons of VIMTO all over the cake.
Let the cake cool completely before frosting.
Frosting
Sift the cocoa powder and icing sugar into a bowl to make them lump-free.
Stir in the melted butter and VIMTO to form a thick paste.
Whisk until the frosting is smooth and creamy.
Spread the frosting on top of the completely cooled cake.
Serve immediately and refrigerate any leftovers.
