INGREDIENTS
Mascarpone Cheese substitute
100gramscream cheese softened
2tablespoonswhipping cream
1tablespoonfull-fat labnehor greek yoghurt or hung curd
1tablespoonsugar
Whipped cream
3tablespoonswhipping creamchilled
2½tablespoonsicing sugar aka powdered sugar or confectioners' sugar
1tablespoonVIMTO
VIMTO Ladyfingers layer
5 to 6ladyfingersaka sponge fingers
½cupVIMTOberry cordial
Garnish
1tablespooncocoa powder
INSTRUCTIONS
Prepare the Mascarpone Cheese Substitute
Carefully mix the softened cream cheese, 2 tablespoons whipping cream, labneh, and sugar in a bowl using a hand whisk ensuring not to overdo the mixing and keep refrigerated.
In another bowl, add 3 tablespoons of whipping cream, powdered sugar and vanilla extract and whip on medium to high speed until stiff peaks form. Approximately 3 to 4 minutes.
Carefully fold the whipped cream into the mascarpone cheese mixture and keep refrigerated.
Layer VIMTO Ladyfingers
Keep your pan ready to assemble the ladyfingers. I used a mini pie pan.
Pour enough VIMTO into another shallow pan. Dip each ladyfinger into the VIMTO, one at a time, and arrange it to cover the base of the tiramisu pan completely. You can break one finger into smaller pieces to cover the gaps.
Spread the prepared cream filling to cover the entire cookie layer. Cling wrap and chill for 4 to 8 hours.
Garnish before serving
Dust the top with cocoa powder using a sieve. Optionally, you can make your stencil with paper by cutting random designs. Place it over the pan and sieve the cocoa mixture to make a beautiful pattern.
